Wow, cool! I will try this. I think fresh bamboo would be too crunchy, so canned is the way to go. And I am jealous of the October bread.
This reminds me of 2 favorite vegan sandwiches I haven't had in a decade. Do you know TMT and/or Chickpea-tuna sandwiches? I am very excited about making sandwiches, thanks!

Chopped off alien tentacles...LOL! That is what it looks like. :) It's an interesting idea to use bamboo shoots in place of fish. Looks yum, especially in that ciabetta bun!
